Cooking allows absorption of some nutrients that you can't get from raw. Dr. Furhman advocates half raw, half cooked veggies. Best of both worlds, and less chance of being deficient in some nutrients compared to all raw or all cooked. The types of cooking he advocates (steaming, making soups, water-sauteeing) have the least effect on enzymes, minerals, and pH. That would be more from frying, deep frying, high temp baking, grilling, roasting and such. Read his books. It's all in there.

Not by much. There are things in vegetables that aren't in vitamins, many of which haven't been identified yet. Not to mention the fiber you get from the veggies that aren't in a vitamin.
